BRIE AND APPLE PANINI

Yield 4 sandwiches

Number Of Ingredients 8

1/4 cup olive oil
2 shallots, chopped
1/2 teaspoon kosher salt
2 large Pink Lady apples, diced small
1 teaspoon lemon zest (from 1 lemon) plus 1 tablespoon lemon juice (from 1/2 lemon)
1 tablespoon chopped fresh basil
4 ciabatta rolls, sliced in half horizontally
1 pound Brie, sliced into 1/4-inch slices

Steps:

  • Heat a medium saucepan over medium heat. Add 2 tablespoons olive oil to the pan along with the shallots and 1/4 teaspoon salt. Cook, stirring often, until soft and fragrant, about 2 minutes. Add the apples and stir to coat in the oil. Add the lemon zest, juice and remaining 1/4 teaspoon salt. Stir well to coat the apples in all the flavors. Cook, stirring occasionally, until the apples begin to brown and are cooked through, about 8 minutes. Stir in the basil and set aside to cool slightly.
  • Meanwhile, lay the ciabatta halves out so they are open-faced. Scoop out some of the inside of the bread and discard. Divide the Brie evenly among the halves, about 3 slices per half, tearing them as needed to cover the bread. Divide the apple mixture on the bottom halves of each sandwich (approximately 1/4 cup per sandwich). Place the tops on the sandwiches and press slightly to close.
  • Heat a large skillet over medium heat. Add 1 tablespoon olive oil to the skillet along with 2 sandwiches. Place a lid smaller than the skillet on top of the sandwiches and press down gently. Cook until golden brown on the first side, about 3 minutes. Flip the sandwiches and repeat on the second side until the bread is golden brown and the cheese is melted. Repeat with the remaining oil and sandwiches. (Alternatively, you can use a panini press.) Serve warm.

GARLIC PARMESAN PANETINI

Around Christmas I buy about 5-7 large bags of Nonni's Garlic Parmesan Panetini Toast, which is the ultimate foundation for my Brie & Red Onion appetizers. These are seasonal so if you can't find them, which has happened to me, you can make your own. Here's my version.

2 baguettes
olive oil, extra virgin
granulated garlic
parmesan cheese, finely grated

Steps:

  • 1. Slice baguettes diagonally about 1/4" thick.
  • 2. Mix olive oil, granulated garlic and grated Parmesan in a bowl and lightly brush one side of each baguette slice. I prefer to use freshly grated Parmigiana Reggiano cheese, but I have used canned grated Parmesan in a pinch...
  • 3. Put on baking sheet and bake at 350 degrees for about 10 minutes or until crisp and lightly toasted. Store in Zip-Lock bag.
  • 4. These are the perfect base for my Baked Red Onion Preserves and Brie Panetini.

BACON, BRIE AND RED ONION BAGUETTES

Grab a fresh crusty baguette and treat yourself to a chunky bacon sandwich with melting cheese and a rich red onion chutney. Toast 'til golden and serve!

1 large white baguette , sliced into 4
8 rashers of smoked back bacon , grilled
200g brie , cut into slices (or chunks)
4 tbsp red onion chutney

Steps:

  • Heat your oven to 200C/180C fan/gas 6. Slice the baguette sections vertically and fill each with 2 slices of bacon and a quarter of the cheese. Put them on a baking sheet. Cook in the oven for 5 mins, until the bread is crisped up and the cheese is beginning to melt.
  • Top each with a dollop of red onion chutney and serve immediately.

RED ONION PRESERVES

Yield About three cups

Number Of Ingredients 7

6 or 7 red onions, about 2 1/2 pounds
4 tablespoons butter
1/4 teaspoon allspice
1 bay leaf
1 teaspoon finely grated fresh ginger
3 tablespoons honey
1/4 cup red-wine or malt vinegar

Steps:

  • Peel the onions. Cut each in half lengthwise. Place each half, cut-side down, on a flat surface and cut into half-inch thick slices. There should be about eight cups.
  • Heat the butter in a heavy kettle and add the onions, allspice, bay leaf and ginger. Cook, stirring often and scraping all around the bottom, about 10 minutes. Stir in the honey and vinegar. Cook, stirring often, five minutes longer.
  • Spoon the preserves into a bowl and let cool. The preserves may be stored, tightly covered, indefinitely in the refrigerator. Serve hot with any grilled meats, fish, in omelets and with breakfast meats such as ham and eggs. Serve cold with cold sliced meats or chicken.
