This is a complimentary dish served by a local upscale restaurant. They serve it before you receive your salad along with a dish of fresh vegtable sticks and olives. I can make a meal on just on the veggies and this bean salad. (Prep time does not include the overnight chilling).

3 (16 ounce) cans red kidney beans, drained & rinsed
1 cup chopped onion
1 cup chopped celery
1 cup mayonnaise
1/4 cup oil
1 tablespoon regina red wine vinegar
1/4 cup sweet pickle relish, drained
1 pinch sugar
salt & pepper

Steps:

  • Mix mayonnaise, oil vinegar, sugar, salt and pepper.
  • Add onions and stir well.
  • Then add the celery, beans and relish.
  • Chill overnight.

Steps:

  • In a small bowl, combine onions and vinegar. Set aside to macerate while preparing rest of salad, or up to three hours.
  • Halve cherry tomatoes and place in a serving bowl. Sprinkle with 1 teaspoon salt. Add kidney beans, onion mixture and olive oil. Toss gently to mix, adjust salt to taste, and serve.

I saw this on Nigella Bites last night and made it for lunch today. We had it with crusty olive bread, but it would be nice as part of a buffet or picnic or as a potluck dish. It's very quick and easy to make, healthy and quite tasty. I used one can of beans, vine-ripened tomatoes, and everything else as listed in the recipe.

I make bean salads all the time. I wanted to change things up a bit from my usual vinegar or lemon juice vinaigrette. I like this on it's own as a snack or add fresh bread, boiled potatoes or rice for a healthy meal.

1/2 cup onion, finely minced
1 cup celery, chopped
2 tomatoes, diced

I love Red Kidney Bean salad! My mom always made this when i was growing up and we always brought this salad to family gatherings and always went home with a empty bowl. My co-workers recently tried this salad and really enjoyed it. It is now a family favorite! enjoy.

1 lb can red kidney beans
1 small jar green olives(i buy the pre-sliced green olives)
4 to 6 dill pickles
1 medium white onion
1 teaspoon black pepper
1/2 teaspoon salt
2 to 3 tablespoons miracle whip salad dressing

Steps:

  • 1. You will need a medium sized serving bowl or dish. drain your kidney beans and rinse them and shake off excess water,then drain your green olives(I buy the pre-sliced green olives) and add both to your serving bowl.
  • 2. chop or dice up your onion and dice up your dill pickle spears and add to the beans and green olives and mix well. Add your salt and pepper and mix well again.
  • 3. Add your miracle whip and mix real well and then chill overnight and enjoy the next day as a side or a lite lunch.
  • 4. *****Tips****** You can increase or decrease the amount of salt and pepper you use and the same for the salad dressing, it all depends on what taste best to you.

Steps:

  • Drain and rinse two cans of Red Kidney Beans. In a bowl, mix beans, two or three boiled eggs, onions, sweet pickle relish, and enough Miracle Whip dressing to moisten. You could add cubed cheese if desired.
