Sesame Red Curry Chicken with Bok Choy and Sweet Coconut Rice image

4 cups chopped bok choy
1 red bell pepper, seeded and sliced
1 pound skinless boneless chicken breast halves, 4 (4-ounce) halves
Salt and ground black pepper
1/2 cup reduced-sodium chicken broth
1/2 cup sake (rice wine)
2 teaspoons sesame oil
1 tablespoon minced fresh ginger
1 tablespoon red curry paste
1/4 cup flaked coconut
2 cups quick cooking jasmine rice
2 (14-ounce) can light coconut milk
1/4 cup freshly chopped cilantro leaves, for garnish

Steps:

  • Arrange bok choy and red pepper in bottom of slow cooker. Season 4 chicken breast halves all over with salt and black pepper and place on top of bok choy.
  • In a small bowl, whisk together broth, sake, sesame oil, ginger, and curry paste. Pour mixture over chicken. Cover and cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours.
  • In a small skillet toast flaked coconut on low heat until lightly toasted, about 5 to 8 minutes. To a medium saucepan, add rice and coconut milk and set pan over medium-high heat, bring to a simmer for 5 minutes. Remove from heat and let stand 5 minutes. Stir in toasted coconut. Set aside 1 1/2 cups for another recipe.
  • Spoon rice onto a serving platter. Top with chicken, bok choy, bell peppers and sauce from slow cooker. Garnish with cilantro.

1 lb boneless skinless chicken thighs
2 tablespoons vegetable oil
3 small Japanese eggplants, or
1 large eggplant, cut into chunks
1 large onion, cut into chunks
2 garlic cloves, minced
1 tablespoon fresh gingerroot, minced
1 tablespoon Thai red curry paste
1 (400 ml) can coconut milk
2 tablespoons fish sauce
1 tablespoon granulated sugar
1/2 teaspoon lime rind, grated
1 tablespoon lime juice
1/4 teaspoon salt
2 sweet green peppers, cut into chunks
1/2 cup lighty packed fresh Thai basil or 1/2 cup basil
1/2 cup lightly packed fresh coriander leaves

Steps:

  • cut chicken into bite-size pieces.in a wok or large skillet, heat 1 tablespoon of oil over high heat, stir fry chicken in batches, until browned, about 3 minutes, transfer to plate, set aside.
  • add remaining oil to wok, stir fry eggplant, onion, garlic, ginger and curry paste until onion is softened, about 3 minutes.
  • pour in coconut milk and bring to a boil, reduce heat to medium and cook for 5 minutes.
  • reduce heat to simmer, add fish sauce, sugar, lime rind and lime juice, salt, peppers and chicken and any accumulated juices. cover and cook stirring occasionally until slightly thickened and peppers are tender, about 10 minutes.
  • add basil and coriander, and serve.

1/4 cup chicken broth
2 tablespoons Thai red curry paste
1 teaspoon finely chopped gingerroot
2 cloves garlic, finely chopped
1 tablespoon olive oil
1 lb boneless skinless chicken breasts, cut into bite-size chunks
1 tablespoon creamy peanut butter
1 cup sugar snap pea pods
1 red bell pepper, diced (1 cup)
Salt and pepper, if desired
2 cups cooked rice
Chopped fresh cilantro, if desired
Lime wedges, if desired

Steps:

  • In medium bowl, mix yogurt, chicken broth, curry paste, gingerroot and garlic until well blended. Set aside.
  • In 12-inch nonstick skillet, heat oil over medium-high heat. Add chicken; cook 3 to 4 minutes or until chicken is no longer pink in center. Add peanut butter; cook 1 to 2 minutes or until chicken is well coated.

2 cups coconut milk
1 cup water
1/2 cup grated coconut (or 1/2 cup dessicated coconut soaked in milk)
1 chicken stock cube
2 tomatoes, quartered

  • In a large pan mix the coconut milk with the curry paste and water, Bring to the boil, reduce heat to simmer, and, add the chicken pieces.

This recipe is highly adaptable to whatever vegetables or meat you have on hand! Add rice or noodles to make it more filling.

1 medium yellow onion, diced
1 teaspoon garlic, minced
1/4 cup cilantro, chopped
1 zucchini, halved and sliced
1 red bell pepper, diced
1 lb chicken breast
2 (13 1/2 ounce) cans light coconut milk (shaken)
26 ounces chicken stock
3 -5 tablespoons red curry paste (or to taste)
3 tablespoons fish oil
3 tablespoons lime juice (fresh)
1 tablespoon honey
1 teaspoon red pepper flakes
salt & pepper
sriracha hot chili sauce
cilantro, chopped
Thai chile
rice or rice noodles

Steps:

  • Heat Olive oil in soup pot, add onions and cook until translucent, add garlic and red curry paste, sauté for 2 minutes more.

1 jar red curry paste, Thai Kitchen Brand recommended
4 clove garlic, minced
1 sweet yellow onion, sliced
2 (13.5 oz) cans unsweetened coconut milk, Thai Kitchen brand recommended
1 red bell pepper, sliced
1/2 cup of carrots, sliced on the bias, or fresh green beans
2 Tbsp brown sugar
salt & pepper to taste
cayenne pepper, to taste, use very little if you like it mild or use a lot if you like it hot!, optional
1/2 lime, freshly squeezed
Fresh Thai basil, optional

Steps:

  • 1. If using fresh chicken: In a large sauté pan heat on medium heat, heat about 1-2 tablespoons oil in the pan. Lightly salt and pepper the chicken pieces and add to the pan. Brown chicken on all sides, remove from pan and set aside. You may need to do this step in two batches. 2. In the same pan add additional oil if necessary and then add the red curry paste. Stir for a minute to release the curry's aromas. Add the onion, red bell pepper and carrots. cook until the onions are translucent. Add the coconut milk and brown sugar. Stir to combine. (If you like more tomato flavor, don't be afraid to add a squirt of ketchup or tomato paste.) Cook until the vegetables on low until al dente, stirring occasionally. Add the chicken and fresh lime juice just before serving. Garnish with basil, and serve with steamed rice. Serves: 6-8

1/4 lb red potatoes, chopped in bite size pieces
drizzle olive oil
1 teaspoon chili powder
1 teaspoon parsley

1 teaspoon garlic powder
1 tablespoon curry, and

1/2 cup chicken broth
1 (13 ounce) can coconut milk (I use Thai Kitchen)

Steps:

  • In a large stock pot drizzle olive oil in bottom of pan and put burner on high. Add cut up chicken pieces, liberally salt and pepper and let brown, In the mean time. Cut your red potatoes in to bite size pieces and set aside. Add all your seasonings to the cooked chicken in your stock pot and stir and let cook on medium high until fragrant (a few minutes). Then add chicken broth and your potatoes, salt again and put the lid on the pot and let simmer for 10-15 minutes. The broth will have reduced a bit, potatoes will have a wee bit of a bite to them and your curry will be very fragrant! Turn heat down to medium low and add coconut milk and Lime Juice. Let this simmer for a bit and just before serving add yogurt, stir well and serve.
  • **I know it sounds like a lot of salt and spices. But both Potatoes and chicken are fairly bland all by themselves and the yogurt and coconut milk will mellow out what flavor you do have. Trust me, savory is GOOD!
  • ***if you like your curry to be a bit thicker you can add 1 Tbsp of corn starch to a 1/2 cup water and stir well then add to your curry.
  • ****Could also be thinned with more chicken broth and be made in to a LOVELY flavorful soup!
