HOMEMADE HOT HONEY (INFUSED WITH RED CHILES)
Easy, homemade hot honey is infused with red chiles for a deliciously sweet and spicy condiment. Great on chicken wings, salmon, or even in cocktails!

Steps:
- Add chop dried chili peppers and honey to a small saucepan and heat over medium low heat. Bring just to a low simmer, stirring occasionally (do not boil!).
- Simmer 5 minutes, remove from heat and stir in apple cider vinegar. Strain into mason jar, canning jar or airtight container.
- Store in a cool, dry place for up to 3 months.

- Mix the red chile powder into the honey.
- Store at room temperature.
- Please note:
- Red chile powder is made from hot red chiles that have been dried and ground. Do not confuse chile powder with chili powder, the common mixed spice for making chili dishes. Substitutes: cayenne pepper OR paprika (milder) OR chile oil.

RED CHILE CHICKEN WINGS WITH CHIPOTLE HONEY GLAZE
Steps:
- For the blue cheese sauce: Stir together the yogurt, blue cheese, cilantro, onions and salt and pepper to taste in a bowl. Refrigerate for at least 30 minutes before serving to allow the flavors to meld.
- For the hot wings: Heat 2 to 3 inches of oil in a large, high-sided pan until it reaches 375 degrees F on a deep-fry thermometer.
- Sprinkle the wings with salt and pepper. Stir together the chile powders, cumin, 1 teaspoon salt and some pepper in a shallow bowl. Dust the wings with the seasoning mixture and toss in a bowl to evenly coat. Add the wings to the oil in batches and cook until golden brown and cooked through, 8 to 10 minutes.
- For the glaze: In a large bowl, combine the vinegar, chipotle in adobo, honey and Dijon mustard. To a small saute pan, add the butter and melt. Add the melted butter to the bowl with the vinegar-honey mixture and stir to combine.
- Toss the freshly fried wings with the glaze in the bowl. Garnish with cilantro. Serve with the blue cheese sauce.
HOT RED CHILE PEPPER SAUCE
This recipe originated in the caribbean. It is not for the meek. Be careful handling the peppers. Wear rubber gloves and keep your hands away from your eyes! Move over Tobasco!

Steps:
- Combine hot peppers, onions and garlic in the bowl of a food processor or blender and puree.
- Add dry mustard, salt, cloves and vinegar and combine.
- Transfer to a small nonaluminum saucepan and simmer over medium low heat 3 to 4 minutes.
- Pour into warm sterilized jars and seal.
