CHILE-RUBBED GRILLED CHICKEN WITH SALSA

Steps:
- Butterfly the chicken: Slice each breast almost in half horizontally (do not cut all the way through); open like a book so the chicken lies flat.
- Combine the olive oil, garlic, ancho chile powder, cumin, coriander, paprika, chipotle chile powder, 1 teaspoon lime juice and 1 1/4 teaspoons salt in a large bowl. Add the chicken and turn to coat. Cover and refrigerate at least 30 minutes and up to 2 hours.
- Preheat a grill to medium. Meanwhile, make the salsa: Toss the tomatoes, tomatillos, red onion and the remaining 3 teaspoons lime juice in a bowl; season with salt. Cover and refrigerate until ready to serve.
- Brush the grill grates with olive oil. Grill the chicken, turning once, until marked and just cooked through, 4 to 6 minutes per side. Top with the salsa and serve with the lime wedges.

GRILLED CITRUS CHICKEN WITH FRESH SALSA

Steps:
- For the chicken: Mix all the ingredients except the chicken in a large bowl.
- Add the chicken to the mixture and coat evenly.
- Cover the bowl and refrigerate for at least 4 hours or overnight.
- Preheat the grill or broiler.
- Remove the chicken from the marinade and discard the marinade to protect against cross-contamination.
- Sprinkle the chicken with salt and pepper.
- Place the chicken on the grill or under the broiler and cook until the juices run clear, 6 to 8 minutes per side.
- In the meantime, peel, core and chop the avocado.
- Place the avocado in a clean bowl and toss it with the lime juice quickly so that it doesn't discolor.
- Add the tomatoes, onion and cilantro.
- Add the jalapeño peppers and salt to taste.
- Serve the salsa on top of the chicken with the warm tortillas on the side.

CITRUS CHILI CHICKEN
After trying a delicious grilled corn recipe which featured fresh, high quality chili powder and limes, I was inspired to try making a marinade based on the same for chicken. It was refreshing and delicious - perfect for hot Florida summer nights. I served with Jasmine rice.

Steps:
- In a bowl (or any container you'd use to marinate) squeeze orange and limes.
- Add garlic, chili powder, paprika and red pepper.
- Slash chicken breasts to allow marinade to seep in .
- Add chicken breasts and marinate in fridge for 3 hours or overnight.
- Grill for 15 minutes or until juices run clear.
- After removing from grill, sprinkle more chili powder on chicken, and squeeze lime juice over if desired.

GRILLED TOMATILLO SALSA
Fire up the grill for a salsa packed with tomatillo, onion and cilantro and a shot of chipotle chile.

- Prepare a grill over medium heat.
- Put the tomatillos, onion and garlic on the grill (put the garlic on a metal skewer or small piece of aluminum foil to keep it from slipping through the grates.) Grill the vegetables, removing them as they are ready, until the tomatillos, turning as needed, are soft but not bursting, the onion is tender and the garlic skin is charred, 5 to 15 minutes. Cool slightly.
- Peel the garlic and put in a blender with the tomatillos, onion, cilantro, chipotle chile and 1/2 teaspoon salt. Blend until well incorporated but slightly chunky.

Steps:
- Preheat oven to 350º.
- Heat olive oil in frying pan and brown chicken breasts on both sides.
- Remove from pan and place in oven proof baking dish.
- Open dried chiles, remove and discard seeds and stem.
- (Seeds are removed to prevent burning) Cut chiles into pieces.
- Melt butter in frying pan.
- Lightly sauté chiles in butter.
- Add chopped onions and garlic.
- Tear tortillas into pieces and add to pan.
- (The tortillas help to thicken sauce.) Sauté until ingredients are lightly browned.
- Add chicken stock and salt and simmer until ingredients are soft.
- Remove from heat and cool sauce to room temperature.
- Transfer cooled sauce to blender and blend until smooth.
- Pour sauce over chicken breasts.
- Bake at 350º for 20-25 minutes or until chicken is done.
- Remove from oven, top with shredded jack cheese and garnish with sprigs of cilantro.
- Bake a few additional minutes to melt cheese if necessary.
