Red Cabbage Slaw With Cilantro and Citrus image

Flavored with citrus, maple syrup, and cilantro, this slaw makes an excellent topper for tacos or side for anything you've got on the grill.

Yield Serves 4 as a side or 8-10 as a topping

Number Of Ingredients 11

½ head red cabbage, cored and finely shredded
1 large carrot, cut into fine julienne
¼ cup (60 mL) chopped cilantro leaves
1 bunch green onions, diced
1 Tbsp lime juice
1 Tbsp orange juice
½ tsp pure maple syrup
1 Tbsp extra virgin olive oil
1 garlic clove, peeled and minced
½ tsp sea salt
¼ tsp white pepper

Steps:

  • In a salad bowl, toss together cabbage, carrots, cilantro, and green onions. In a small bowl, whisk together remainder of ingredients to make a light dressing. Toss cabbage mixture with dressing. Taste and adjust seasonings.

Reveling Red Cabbage, Apple and Walnut Salad image

This sherry-infused salad could start, accompany or even punctuate a meal, or become a refreshing private lunch.

Number Of Ingredients 10

1/4 head red cabbage
1 tablespoon sherry vinegar
2 tablespoons dry sherry
2 tablespoons walnut oil
1 tablespoon red currant jelly
1 teaspoon sugar
1 golden delicious apple
1/2 teaspoon fresh lemon juice
1/2 cup toasted walnuts
Salt and pepper

Steps:

  • Using a mandoline or V-slicer, thinly shred the red cabbage. In a medium bowl, whisk the sherry vinegar and the sherry with the walnut oil, red currant jelly and sugar. Toss the cabbage with the vinegar mixture.
  • Peel the apple and slice it into thin discs on the mandoline. Cover the floor of a plate with the apple slices and sprinkle them lightly with the lemon juice to prevent discoloration. Top with the red cabbage salad and sprinkle with walnuts. Season to taste with salt and pepper.

6 tablespoons lingonberry preserves
1/4 cup walnut oil
2 tablespoons sherry vinegar
1 very small head (about 1 pound) red cabbage, thoroughly cored and very thinly sliced
1/4 cup walnuts, roasted and roughly chopped
Salt
freshly ground black pepper
Half an apple, cored and sliced into thin julienne
Brown bread
butter
cheese for serving, optional

Steps:

  • In a mixing bowl, combine lingonberry preserves, walnut oil and vinegar. Add cabbage and walnuts, and mix thoroughly. Season with salt and pepper to taste, and mix again.
  • To serve, divide salad among four plates. Garnish with apples. If desired, serve with brown bread, butter and cheese.

This slaw, a mix of very thinly shredded red cabbage, cilantro, julienned radishes and walnuts, is a perfect sweet-nutty-salty-sour mix. Pair it with dumplings, or other dim sum, and it holds its own.

1/4 cup fresh lime juice
1 tablespoon seasoned rice vinegar
1 tablespoon agave syrup
1 tablespoon fish sauce
Salt to taste (optional; fish sauce is salty)
3 tablespoons grapeseed oil
2 tablespoons walnut oil
1 tablespoon dark sesame oil
8 cups finely shredded red cabbage (1 medium cabbage, quartered, cored and finely sliced)
1/2 cup slivered cilantro leaves with top parts of stems (lay bunch down and cut across the bunch)
1 cup julienned radishes
1 to 2 tablespoons minced fresh ginger, to taste
1 cup lightly toasted walnut halves

Steps:

  • In a small bowl whisk together lime juice, rice vinegar, agave syrup, fish sauce, salt (if using) and oils.
  • In a large bowl, combine red cabbage, cilantro, radishes, ginger and 1/3 cup of the nuts. Toss together, add dressing and toss together again. Refrigerate until ready to serve, and toss again before serving.
  • Mound the slaw in a bowl or on a platter. It looks nice if you press it into a bowl then reverse it onto a platter. Top with remaining toasted nuts just before serving.
