3 small onions sliced in 3/8 inch rounds
2 garlic cloves, minced
2 tsp herbes de provence
salt
1/3 c olive oil
1 yellow zucchini, sliced into 3/8 inch rounds
1 green zucchini, sliced into 3/8 inch rounds
3 roma tomatoes
freshly grated parmesan

Steps:

  • preheat oven to 375 F line bottom of baking dish with onions, half the garlic, half of the herbes de provence and salt ... drizzle with half of the olive oil overlap sliced vegetables alternating colours ... season with salt and sprinkle remaining garlic, herbs and oil evenly over top bake for at least 1 hour sprinkle with parmesan serve hot or at room temp
