Zucchini Patties image

I got this recipe from a friend of my mothers back in the early 80's. Her name was Elaine, and she has since passed. I've made it many times and it's a family favorite of ours. I especially love making it when we have an abundance of zucchini from our garden. Yum! Note: You may also add finely chopped onions and even shredded...

Number Of Ingredients 7

3 c zucchini, grated
1/3 c parmesan cheese, grated
1 c biscuit mix
1 egg, beaten
1 clove garlic, crushed
1 tsp italian seasoning
salt & pepper, to taste

Steps:

  • 1. Mix all ingredients together and drop by spoonfuls into hot skillet with 1/4" oil in it. Note: I like using Canola oil myself.
  • 2. Fry on each side until golden brown.
