Zucchini Crumb Cake image

The Brownie Pan makes the perfect individual size. Or use 8x9" square baking pan

Number Of Ingredients 16

CRUMB TOPPING
1/2 c flour
1/2 c brown sugar
1 tsp cinnamon
1/4 c butter, melted
CAKE
1 1/2 c flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 c butter, melted and cooled
1/3 c brown sugar
1/3 c granulated sugar
1 egg
1 1/2 tsp vanilla
1 c zucchini, shredded

Steps:

  • 1. Preheat oven to 350 degrees. Spray brownie pan with cooking spray.
  • 2. Make Crumb Topping: With fork, mix flour, brown sugar and cinnamon together.
  • 3. Mix in the melted butter until crumbly.
  • 4. Make the cake: Whisk flour, baking powder, baking soda and cinnamon together.
  • 5. Whisk together butter, brown sugar, granulated sugar, egg and vanilla.
  • 6. Whisk shredded zucchini into wet ingredients.
  • 7. Pour the wet ingredients into the dry and mix until combined.
  • 8. Pour batter into the brownie pan.
  • 9. Sprinkle crumb topping on to.
  • 10. Bake 22-25 minutes.
  • 11. Cool completely before removing from pan.
  • 12. Enjoy!
  • 13. * Store leftovers in refrigerator.
