ZUCCHINI CARPACCIO WITH RICOTTA CHEESE image

5 medium zucchini, thinly sliced on mandolin
2 green onions, thinly sliced
3 Tbsp. fresh lemon juice
3 Tbsp. extra-virgin olive oil
2 Tbsp. chopped fresh basil
1 cup Ricotta cheese
Coarse kosher salt
Freshly ground black pepper

Steps:

  • Using life or mandolin, cut zucchini into paper-thin rounds. Arrange rounds, slightly overlapping, on large platter. Sprinkle lightly with coarse salt and pepper, green onion and little spoonful of cheese. Whisk lemon juice and oil in small bowl and drizzle evenly over all.
