Zucchini boats image

Put these on a well oiled BBQ grille and cook these doing the indirect grilling method. I am sorry I cannot tell you how long to cook these....you'll have to judge this for your self.....the zucchini should be soft. If you have more filling than you need....DON'T THROW IT AWAY...freeze it for soup or something...... You can also freeze these once they are filled. Which is a grate time saver.

Number Of Ingredients 9

- 2 good size zucchini's
- 1 - 14.5 ounce can hunts fire roasted tomatoes
- ½ red onion chopped
- 3 cloves garlic "roasted" and smashed
- 2 tablespoons fresh ground pepper
- 1 tablespoon sea salt
- ½ cup cheddar cheese shredded
- ½ cup parmesan cheese
- 1 tablespoon fresh ground pepper for the inside of the zucchini

Steps:

  • Slice the zucchini in half length wise...scoop out the "meat" and chop it up.
  • Chop the onion.
  • Put the tomatoes into a small pan and add the zucchini meat, onion, garlic, pepper and salt.
  • Simmer on low till the onion is almost done and the liquid is all gone. Let this cool completely.
  • Just before you fill the boats...pepper the insides generously with fresh ground pepper.
  • Mix in the two cheeses and fill the boats....
  • You can fill these with as much of the filling as you like. I divided it and used it all.
