Steps:
- Preheat oven to 190C, and grease muffin trays. Saute onion, garlic and bacon until lightly browned. Allow to cool. Grate zucchini and allow excess water to drain out. Combine wet ingredients - eggs, sour cream, melted butter, parmesan & cheddar. Add grated zucchini and sauteed mixture, stir well. Finally, fold in self raising flour and paprika, until combined, and if mixture is too dry add a little milk. Dollop into muffin trays and bake in oven for 15-20 mins.
