Steps:
- Pasta & Broccoli: 1. Boil large pot of water for broccoli and pasta. 2. Cook broccoli until crisp/tender (~2 minutes). 3. Transfer broccoli to collander to drain using a slotted spoon (save water for pasta). 4. Cook ziti in saved broccoli water until just tender. 5. Drain well, transfer to large bowl. Potatoes: 1. In large saucepan, combine potatoes and water, cover and bring to a boil. 2. Reduce to simmer, cook until potatoes are tender (~5 minutes). 3. Drain, saving 2 cups of potato cooking liquid. Sauce: 1. In a large non-stick skillet, heat oil over medium heat until hot but not smoking. 2. Add onion and garlic, cook until onion is soft (~7 minutes). 3. Stir in potates, salt, sage, pepper, and marjoram 4. Cook until potatoes begin to brown and form a crust (~7 minutes). 5. Add broccoli and 1 cup of the saved potato liquid. 6. Cook until broccoli is heated through (~2 minutes). 7. Add pasta and remaining cup of potato liquid, toss to combine. 8. Sprinkle with parmesan cheese.
