Steps:
- toss pork, 2 tsp water and baking soda together and let stand for 5 minutes. Whisl 1/2 cup water, miso, soy, hoisin, and molasses together.
- Pulse white and lt green scallions, ginger, and garlic in processor until coarse. Add mushrooms and chop til fine.
- Heat oil and pork together in sauce pan over medium for 1 minute. Add mushroom mixture and cook til dry and just begins to stick. Add miso mix and simmer until thickens 8 to 10 minutes. cover and keep warm.
- Cook noodles. Ladle sauce over peter and sprinkle with cucumbers, spouts and dark green scallions.
