Zesty Corn Muffins image

This is good old vegetables all thru these muffins..

Number Of Ingredients 15

1 cup(s) whole wheat flour
2/3 cup(s) all purpose flour
1/3 cup(s) sugar
4 teaspoon(s) baking powder
1/2 teaspoon(s) salt
1/2 teaspoon(s) chilli powder
1 1/2 cup(s) all-bran orginal cereal ( like kellogg's)
1 cup(s) skim milk
3 - egg whites
3 tablespoon(s) vegetable oil
1 can(s) ( 8.75oz) whole kernel corn, drained
1/4 cup(s) drained, chopped pimentos
2 tablespoon(s) chopped onions
1 to 2 tablespoon(s) chopped jalapeno peppers
1/2 cup(s) shredded mozzarella cheese

Steps:

  • Stir together flours, sugar, baking powder,salt and chilli powder. Set aside.
  • In a large mixing bowl,combine all-bran cereal and milk. Let stand about 2 minutes or until cereal softens. Add egg whites and oil. Beat well.Stir in corn, pimentos, onions, peppers and cheese. Add flour mixture, stirring only until combined. Portion evenly into twelve 2 1/2- inch muffin-pan cups coated with cooking spray.
  • Bake at 400 about 20 minutes or until lightly browned. Serve warm. Makes 12 muffins
