Zabar's Lemon-Garlic Chicken image

This tastes like the lemon garlic rotisserie chicken you get at the grocery store. Marinating time is not included in prep and cook time.

Number Of Ingredients 10

3 1/2-4 pound(s) whole chicken
4 cup(s) water
1/2 cup(s) fresh dillweed, chopped
3/8 cup(s) vinegar
1/4 cup(s) fresh lemon juice
6 1/2 large garlic cloves, minced
2 - bay leaves
1 - lemon, thinly sliced
3/8 cup(s) vegetable oil
1/2 tablespoon(s) paprika

Steps:

  • Place chicken in a large zip-top heavy-duty plastic bag. Combine the next 7 ingredients; pour over the chicken. Seal bag securely. Marinate the chicken in the refrigerator for 12 hours, turning occasionally.
  • Remove the chicken from the marinade, reserving the lemon slices. Discard the marinade. Place the chicken, breast side up, in a large roasting pan. Combine the oil and paprika; pour over chicken and rub over skin. Place lemon slices over the chicken.
  • Bake, uncovered, at 450 degrees for 10 minutes. Reduce the heat to 350 degrees; cover and bake 1 hour and 10 minutes or until done. Uncover it during the last 10 minutes.
