Yummy Yuca Salad with Crumbled Bacon image

Even if you've never peeled a yuca in your life, this recipe shows you how yummy they are-especially in a salad with mayo, lemon juice and crumbled bacon.

3 lb. yuca (cassava), peeled, cut into 1-inch cubes
2/3 cup MIRACLE WHIP Dressing
1/2 cup chopped red onions
2 Tbsp. lemon juice
1 clove garlic, minced
1 tsp. crushed red pepper
6 slices OSCAR MAYER Bacon, cooked, crumbled

Steps:

  • Cook yuca in boiling water in saucepan 25 to 30 min. or until tender; drain. Cool completely.
  • Mix remaining ingredients except bacon in large bowl until blended; stir in bacon.
  • Add yuca; mix lightly.
