This has to be one of the best potato casseroles ever. if your a cheese lover and a potato lover then this is the one for you.

Number Of Ingredients 8

5 cups white potatoes, cut into cubes
1 large onion
2 cups cubed ham (any brand)
5 ounces bacon, cooked and crumbled
8 -12 ounces Velveeta cheese
2 cups sharp cheddar cheese
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Cook the 5 cups of potatoes till tender. drain and empty into a large bowl.
  • chop and dice the onion and add it to the potato's.
  • next add the ham.
  • melt the velveeta cheese in the microwave or stove top with just enough milk to make it creamy usually about 2 tbls spoons. stir and pour cheese into the bowl.
  • add salt and pepper to taste
  • pour into a 11x13 casserole dish.
  • sprinke cheddar cheese over entire casserole.
  • crumble cooked bacon over casserole.
  • bake on 350 for 25 min till chesse is starting to brown
  • serve hot.
