Steps:
- 1. Boil water for potatoes. 2. Chop potatoes into bite size pieces and add to boiling water. Simmer until fork tender. 3. In bowl, combine onion, relish, pimientos, mayo and mustard. 4. Drain potatoes. Spread on cookie sheet and put in freezer for quick cool. 5. Add potatoes to bowl and mix with salt/pepper. 6. Sprinkle with parsley for garnish.
