YAM AND APPLE CASSEROLE image

2 (16 oz) cans yams, drained
1/4 cup butter, melted
1/2 cup light brown sugar
1/2 cup dark karo syrup
2 tbsp dry sherry
1 tsp cinnamon
1/4 tsp salt
2 Granny Smith apples, peeled, cored and sliced thin

Steps:

  • 1. Puree yams, 2 tbsp melted butter, brown sugar, corn syrup, sherry, cinnamon and salt in food processor until smooth 2. Spread 1/2 yam mixture in greased 10-inch round pan or pie plate. 3. Arrange 1/2 apple slices over the yams 4. Spread remaining yam mixture over top 5. Repeat with the apple slices Brush apples with remaining melted butter. 6. Bake uncovered until apples are lightly browned, about 35 minutes
