WORLD'S BEST PANCAKES image

Yield 12 pancakes

Number Of Ingredients 13

For 9-12 pancakes (we usually triple this):
In dry goods bowl:
3/4 cup sifted unbleached flour
2 Tbsp wheat germ
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt (we do not triple this)
In wet goods bowl:
1 egg beaten
1/2 cup buttermilk (or yogurt)
1/2 cup regular milk (1% OK)
1 Tbsp sour cream
3 Tbsp melted butter

Steps:

  • Mix dry ingredients in bowl. Melt butter while mixing wet ingredients in wet goods bowl. Add melted butter last. Pour dry ingredients into wet bowl and mix thoroughly. Heat griddle to 400 degrees and grease with butter. Use ladle to spoon mix onto griddle. Flip when bubbles appear on top of pancakes. Delicious if topped with a dab of sour cream and homemade jams. Butter and maple syrup is also delightful.
