1 lb boneless skinless chicken thighs
1/2 cup onion
1/2 cup green pepper and red pepper
3 egg yolks
4 cups oil
2 tablespoons oil
2 tablespoons light soy sauce
1 egg white
2 tablespoons cornstarch
2 tablespoons soy sauce
2 tablespoons water
1 teaspoon sugar
1 teaspoon wine (optional)
1 teaspoon cornstarch
1/2 teaspoon sesame oil
1/4 teaspoon salt
2 tablespoons ground roasted peanuts
1 tablespoon ground roasted sesame seeds
1 teaspoon sugar

Steps:

  • Dice chicken into 1/2 inch cubes and marinate in above marinade.
  • Cut onion and peppers into little cubes.
  • Prepare peanut mixture. Set aside.
  • Add marinated chicken to lightly beaten egg yolks.
  • Heat 4 cups of oil to 350°F Deep fry chicken a few pieces at a time for about 2 minutes.
  • Heat 2 Tbsp of oil to stir-fry onion and peppers. Pour in seasoning sauce and stir until sauce thickens.
  • Return chicken to sauce and mix well.
  • Serve with grounded peanut mixture on top of chicken.
