WINTER SEAFOOD CHOWDER image

Number Of Ingredients 10

2 Tblsp olive oil
6 oz bacon (cut in 1/2 inch pieces)
2 yellow onions(chopped, about 2 cups)
4 cups fish stock or bottled clam juice
6-8 sm red potatoes (unpeeled, cut in 1/2 inch chunks)
1 Red bell pepper (diced)
1 lb cod or talapia cut in 1 inch cubes
3/4 lb med shrimp peeled
1 cup (8 oz) heavy cream
2 Tblsp butter

Steps:

  • In lg pot heat olive oil, add bacon, + onions + cook 10 min (stir occasionally). Add clam juice + bring to a boil over high heat. Reduce heat to med, add potatoes + pepper. Simmer uncovered until potatoes are almost done but still firm (8-10 min.)Add the fish + simmer 4 min. Stir in the cream + season with the salt + pepper. Swirl in the butter + serve immediately. Serve warm crusty bread with this.
