WILTED CABBAGE WITH PEANUTS AND BACON image

Number Of Ingredients 6

one head purple cabbage, chopped into about 1/2 inch pieces
one large purple onion, chopped the same
2 to 3 TBS olive Oil
2 TBS balsamic vinegar
4 to 5 OZ good bacon bits (real)
1 cup coarsely chopped unsalted peanuts

Steps:

  • use large skillet or wok saute onions in olive oil, then add cabbage, saute, and add vinegar. salt and Pepper to taste. cover and simmer for about 10 minutes. (you can add a TBS or two of water, if more liquid needed, or little more of oil/vinegar) add 1 TBS sugar or packet splenda add the peanuts and bacon bits, stir simmer a few more minutes, until wilted. serve warm.
