Williamsburg Orange Cake image

From my mother-in-law's recipe collection.

Number Of Ingredients 13

2 1/2 cup(s) all purpose flour
1 1/2 cup(s) sugar
1 1/2 teaspoon(s) baking soda
3/4 teaspoon(s) salt
1 1/2 cup(s) buttermilk
1/2 cup(s) butter, softened
1/4 cup(s) shortening
3 - eggs
1 1/2 teaspoon(s) vanilla
1 cup(s) golden raisins, cut up
1/2 cup(s) chopped nuts
1 tablespoon(s) grated orange peel
- orange butter frosting (below)

Steps:

  • Heat oven to 350. Grease and flour rectangular pan, 13x9x2 inches, or 2 round pans, 9x1 1/2 inches. Beat all ingredients except frosting in large mixer bowl on low speed, scraping bowl constantly, 30 seconds. Beat on high speed, scraping bowl occasionally, 3 minutes. Pour into pan(s).
  • Bake until wooden pick inserted in center comes out clean, rectangular 45-50 minutes, layers 30-35 minutes. Cool layers 10 minutes; remove from pans. Cool completely. Frost rectangular or fill and frost with Orange Butter Frosting. *If using self rising flour, decrease soda to 1/2 teaspoon and omit salt.
  • To make Orange Butter Frosting: Mix 1/3 cup butter, softened, and 3 cups powdered sugar. Beat in 2 teaspoons grated orange peel and about 2 tablespoons orange juice just until of spreading consistency.
