Whole Wheat Pizza image

1/2 cup water, warm (105-115ºF)
1 tablespoon olive oil, extra-virgin
1 teaspoon sugar
1/2 teaspoon salt
1/2 package yeast, dry (about 1 teaspoon)
3/4 cup unbleached flour, white
3/4 cup whole wheat flour
Olive oil
1/2 pound ground beef, lean
1 cup tomato sauce, thick (preferably homemade or low-sodium)
1 cup mozzarella cheese, shredded (4 ounces)
2 tablespoons Parmesan cheese, grated
Crushed hot red pepper (optional)

Steps:

  • Here's a dinner project in which the whole family can participate. You can use your own homemade sauce or a commercial sauce in a jar. If it's not thick, simmer it for 20-25 minutes to reduce and thicken. Measure after reducing.1. Combine water, 1 tablespoon olive oil, sugar, and salt in a medium mixing bowl. Sprinkle yeast over mixture, stirring until dissolved. Gradually add flours, mixing well after each addition.2. Turn dough out onto a lightly floured surface and knead about 4 minutes or until smooth and elastic. Shape into a ball and place in a bowl coated with a little olive oil, turning to grease top. Cover and let rise in a warm place (85ºF), free from drafts, 1 hour or until doubled in bulk.3. Coat a 12-inch pizza pan with ½ teaspoon olive oil and set aside. Punch dough down. Lightly coat hands with oil and pat dough evenly into pizza pan. Bake at 425ºF for 5 minutes.4. Cook ground beef in a skillet over medium heat until meat is browned, stirring to crumble. Drain well on paper towels.5. Spread 1 cup tomato sauce evenly over pizza crust, leaving a ½-inch border around edges. Sprinkle mozzarella cheese over top. Sprinkle meat over mozzarella, then sprinkle on Parmesan cheese and red pepper flakes.
