Whole Wheat Banana Bread image

Whole grain, low sugar and soooo good! Not too dense and heavy and not dry and crumbly like some whole grain baked goods can be. Moist and sweet enough, but not too sweet to have for breakfast!

1/3 cup(s) oil(light olive oil, melted coconut oil, melted butter)
1/2 cup(s) honey or maple syrup
2 - eggs
1 cup(s) mashed banana(about 3)-very ripe
1 teaspoon(s) vanilla
11/4 cup(s) whole wheat flour(or white whole wheat flour)
1/2 cup(s) ap flour
1/2 teaspoon(s) salt
1/2 teaspoon(s) cinnamon
1 teaspoon(s) baking soda
1/4 cup(s) hot water

Steps:

  • Preheat oven to 350F. Grease 9x5 loaf pan.
  • Whisk together oil and honey. Add eggs and beat. Stir in bananas and vanilla.
  • Whisk together flours, salt and cinnamon. Add dry ingredients to wet and stir to combine. Dissolve baking soda in hot water. Blend in the hot water/baking soda.
  • Pour into greased loaf pan. Bake for 55-60 min., til toothpick inserted in center comes out clean. If tops brown too fast, loosely cover with foil. Remove from oven and cool in pan for 10 min., then remove to wire rack to cool completely.
