WHOLE ROASTED CAULIFLOWER WITH OLIVE OIL & CAPERS image

Number Of Ingredients 6

1 (2-lb) head cauliflower, green leaves discarded
1/4 cup + 2 Tbl. fine EVO
1 tsp. salt, 1/4 tsp. pepper
1 Tbl. fresh lemon or more to taste
1 Tbl. drained small capers (drained)
2 cups loosely packed fresh, flat-leaf parsley sprigs.

Steps:

  • *Preheat oven 450. Oil 9 in. pie plate or square baking dish. Core cauliflower, leaving head intact and put head in pan. Drizzle 2 Tbls. oil over top and sprinkle with 1/2 tsp. salt. Bake until tender about 1-1&1/4 hrs. (Cauliflower will have beautifully caramelized florets) Transfer to serving dish. Whisk lemon juice, capers, pepper, remaining salt and then add remaining EVO whisking briskly. Put parsley sprigs around cauliflower then drizzle both with dressing. Yummy!
