WHITE CORN CASSEROLE image

Yield 8-10 persons

Number Of Ingredients 10

2 (16-ounce) packages frozen white shoe peg corn, slightly cooked and drained, or 8 ears of silver queen corn slightly cooked and cut from cob
1 (16-ounce) can creamed white corn
3 bacon slices
1 onion finely chopped
1 pint sour cream
3 eggs
1 tablespoon sugar
1 cup whipping cream
2 cups crushed club crackers
2 tablespoons salted soft butter

Steps:

  • Cook bacon until crisp, drain on paper towels and crumble. Saute' the onions in the bacon dripping. Beat eggs slightly and combine with the cream and sugar, then combine the remaining ingredients. Pour into a 2 quart, buttered casserole dish and bake at 300 degrees for 1 hour, or until the corn has risen and slightly browned on top.
