WHIPPED POTATOES WITH HORSERADISH image

Number Of Ingredients 8

2 tb unsalted butter melted divided plus 1/2ccut up at temp
21/2 lb russet potatoes peeled cut into 2"pieces'
kosher salt
4 oz cream cheese cut into 1" cubes room
2 tbl prepared horseradish
2/3 cdcup whole milk warmed
1 bunch scallions white pale green minced'
sweet paprika

Steps:

  • brush 8x8x2 or any 6 cup baking dish with 1 tbl melted butter. Place potatoes in large pot ad cold water add salt bring to a boil then reduce heat to med. Cover with lid slighajar and simmer about 20 minutes. Drain potatoes return to pot shake and stir with wooden spoon over very low heat until dry. Then use a potatomasher mash coarsely. Use hand mixer beat 1/2 up butter into potatoes blend. Beat in cream cheese add a few pies at a time then horseradish. With motor runnng gradually add milk beating until potatoes are light and fluffy season with salt and pepper. Stir in scallions. Scrape potatoes into prepared dish. Use a spatula to create peaks across the surface. Drizzle potatoes with remaining tbsp mbutter and sprinkle with paprika. Do ahea 1 day let stand ar room temo to cool. Cover and chill Bake in 350 uncovered until they are heated through and top is golden about 40 minutes if chilled add 10 minutes.
