WHEELER FAMILY EGGNOG image

Yield 20 servings

Number Of Ingredients 8

12 eggs, separated
1 cup granulated sugar
1 cup bourbon (optional)
1 cup cognac (optional)
1/2 tsp salt
3 pints (6 cups) heavy whipping cream (or 3 cups cream supplemented with 3 cups milk added separately)
1 tsp vanilla
1 tsp or more freshly grated nutmeg

Steps:

  • Beat together egg yolks and sugar until thick and light lemon colored. Slowly beat in vanilla and alcohol, if using. Beat cream to soft peaks. Add salt to egg whites and beat until almost stiff, or until firm-soft peaks. In large container, fold whipped cream into yolk mixture, and then fold in beaten egg whites. Chill one hour. Stir in 3-6 cups of milk to thin nog to desired consistency. Transfer to serving bowl and sprinkle top with grated nutmeg. Serve with cognac or whiskey on the side if not already added to the mixture.
