Weight Watcher's Potato Soup image

I love potato soup and this one is delicious made with low fat Velveeta and crispy bacon. If you want it to be a bit healthier, you could make it with turkey bacon. Each 1 cup serving is 4 Points Plus

32 oz chicken broth, non-fat
3 lb potatoes, diced
8 oz reduced fat velveeta cheese
4 slice bacon, cooked crisp
1/4 c fat free sour cream
1/2 medium onion, diced
3 Tbsp water
2 Tbsp flour

Steps:

  • 1. Combine broth and potatoes. Cover and cook 20 minutes or until potatoes are done.
  • 2. While potatoes are cooking saute onions. Add to mixture.
  • 3. Cook bacon until crisp. Cool on paper towel and once cooled break into pieces.
  • 4. Stir in cheese and sour cream. Simmer until cheese melts.
  • 5. Thicken with flour and water mixture. Add crumbled bacon before serving.
