Warm Chicken-Mandarin Orange Salad image

Sweet mandarins and an awesome assortment of veggies complement tender chicken breasts in this wonderful Warm Chicken-Mandarin Orange Salad recipe.

6 cups loosely packed torn romaine lettuce
1 cup coarsely chopped sugar snap peas
1 can (11 oz.) mandarin oranges, drained
1/2 cup slivered red onions
1 lb. boneless skinless chicken breasts, cut into thin strips
1/4 tsp. black pepper
2 Tbsp. olive oil, divided
1/3 cup orange juice
1 Tbsp. HEINZ Red Wine Vinegar
1 tsp. GREY POUPON Dijon Mustard
1/2 cup sliced almonds, toasted

Steps:

  • Toss lettuce with peas, oranges and onions in large bowl.
  • Season chicken with pepper. Heat 1 Tbsp. oil in large skillet on medium heat. Add chicken; cook and stir 5 min. or until done. Remove from skillet; set aside.
  • Add orange juice and vinegar to hot skillet; stir to scrape browned bits from bottom of skillet. Stir in mustard and remaining oil until blended.
  • Place chicken over salad; drizzle with warm dressing. Sprinkle with nuts.
