VIETNAMESE PHO image

Yield 8-10 bowls

Number Of Ingredients 9

1 whole chicken
1 medium onion
2-3 large carrots
Chicken boullion
2-3 cups fresh bean sprouts or 2 small jars of bean sprouts
Fresh mint (as needed)
Fresh cilantro (as needed)
1 Vietnamese herb pack (Pho Hoa Pasteur)
1 pack Chanta boon rice stick noodles (bahn ph'o thu'o'ng hang)

Steps:

  • 1. Bring a large pot of water to boil for the chicken with a little salt, whole carrots, and whole onion. 2. When water boils, put whole clean chicken in & boil 15 minutes on each side. 3. Remove chicken from water (reserve water) & shred the meat into medium to small chunks. Put the chicken bones back into the water with onions carrots; add herb pack and let simmer for 1 hour. After 30 minutes add chicken boullion to taste and continue to simmer for 30 more minutes. 4. Meanwhile, prepare garnishes in separate serving bowls (beans, mint, cilantro). 5. Cook noodles in boiling water for 7 minutes; drain. To Serve: 1. Remove onion, carrots, bones, and herb pack from broth. Keep broth hot. 2. Place noodles in bowl; pour hot broth over noodles and drain broth back into stockpot. 3. Spoon more hot broth over the noodles, add chicken, bean sprouts, mint, and cilantro as desired.
