Steps:
- Heat one teaspoon oil in heavy pot. Add pressed garlic, saute briefly, then add rinsed black beans, adobo seasoning or chile in adobo, salt and 1/4 cup of water, and cook for 10-15 minutes until beans are soft. Meanwhile, heat remaining 2 tsp oil in large saute pan. Add sliced peppers, onions, mushrooms, jalapenos, oregano and salt to taste. Cook on very high heat, stirring occasionally, until veggies are cooked and slightly blackened, about 10 minutes. Pour lime juice into pan and deglaze, then remove from heat. Combine black beans and vegetables and serve wrapped in a whole wheat tortilla with greek yogurt and cilantro.
