Vegetarian Meatloaf image

This is a great, tender meatloaf the whole family can enjoy.

12 oz vegetarian meat (i use yves)
1/2 pkg beef and onion soup mix
1 Tbsp canola oil
2 large eggs, beaten
1/2 tsp garlic
1/2 c shredded cheddar cheese
1/4 green pepper
5 slice white bread
nonstick spray
MEATLOAF GLAZE
1/2 c ketchup
1 tsp mustard
5 tsp brown sugar

Steps:

  • 1. Preheat oven to 400 degrees.
  • 2. In a large bowl, combine vegetarian meat, beef and onion soup mix, garlic and finely diced green peppers.
  • 3. Tear bread into small quarter sized crumbs. Add to mixture. Stir well.
  • 4. Add oil and beaten eggs. Mix. Add shredded cheese. Mix.
  • 5. Spray dish with nonstick spray before putting in oven. Either use loaf pan or make into loaf shape on any pan. Bake about 35 minutes.
  • 6. GLAZE: mix ketchup, mustard, brown sugar. Top meatloaf. If you are not using loaf pan, coat the sides as well to prevent it from drying out.
