Steps:
- 1. Pour lentils into a medium-sized saucepan. Cover with 2 cups of water, bring to a boil over high heat, stirring occassionally. Reduce heat to low, cook until tender 15-20 minutes. 2. Heat olive oil in skillet. Saute onions until transparent and golden. 3. Remove lentils from heat. Mix in bulgur, cover pan and set aside for 10 minutes. 4.Transfer mixture to a large bowl, add onions and oil, blend together well. 5. Season with salt, pepper and cayenne, shape mixture in to 2-inch thick sausage shapes, add 2 T parsley and scallions on top.
