Steps:
- Saute peppers until almost done in large skillet or dutch oven. Add onions and garlic. In separate pan, heat oil or butter, add flour, to make a roux. Fry okra if liked. Add vegetable broth and tomatoes to onion mixture. Let simmer. Add spices. Add okra and soy meat near end (to retain meats texture). Add tomato sauce or more broth to desired consistency. I add extra cayenne and hot sauce to make it extra spicy. Hot sauce is more vinegary so be careful. Meanwhile cook rice, about 15 minutes in microwave for about 2C uncooked.
