Vegetarian Greek Bell Pepper and Feta Bake image

I love making this dish for parties and serving it with bread as a dip or spread. It's easy to make and everybody loves it. But you can also serve it as a vegetarian side or main dish.

7 ounces feta cheese, cubed
3 red bell peppers, finely chopped
2 small onions, finely chopped
5 tablespoons extra-virgin olive oil, or more to taste
3 tablespoons tomato paste
3 cloves garlic, minced or pressed
1 teaspoon ground sweet paprika, or more to taste
1 pinch freshly ground black pepper to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine feta cheese, bell peppers, onions, olive oil, tomato paste, garlic, ground paprika, and pepper in a baking dish or casserole dish with a lid.
  • Bake in the preheated oven until vegetables are soft and cheese is melted, about 25 minutes. Remove lid and bake for an additional 5 minutes.
