VEGETARIAN CABBAGE ROLL image

7 savoy cabbage leafs
1 medium carrot
2 stalks celery
1/2 small yellow onion
3 scallions
4 cloves garlic minced
1/3 cup cooked wild rice
12 oz tomato sauce
1/4 teaspoon cayenne powder
salt & pepper to taste
1 tablespoon olive oil

Steps:

  • Fine dice celery, onion, carrot, scallion, and one leaf of cabbage. Saute', using 1 tablespoon of olive oil, until tender. Add cayenne and garlic, then season to taste with salt and pepper. Let cool In mixing bowl, mix above ingredients with cooked wild rice. Remove the main stem of the remaining cabbage leafs, then steam for roughly 10 minutes or until tender. Place in cold water to stop the cooking process. Evenly distribute the rice filling into each leaf. Fold edges in, then roll each leaf around filling. Place rolls in a small baking dish and pour tomato sauce over the top. Cover and bake at 350 for approximately 30-45 minutes. Serve as a side dish
