Vegetable Soup with Delicata and Ambercup Squash image

Perfect soup for the winter to use the squash and leeks from the garden.

1 medium delicata squash - halved, seeded, and chopped
1 ambercup squash - halved, seeded, and chopped
1 large potato, peeled and chopped
1 large leek, rinsed and chopped
1 small carrot, chopped
1 ½ cups water, or more to taste
1 ½ cups milk, or more to taste
salt and ground black pepper to taste
1 pinch ground nutmeg, or to taste

Steps:

  • Combine delicata squash, ambercup squash, potato, leek, and carrot in a large pot. Pour in water and milk. Bring to a boil slowly over medium heat. Cover, reduce heat to low, and simmer until vegetables are soft, about 20 minutes. Season with salt and pepper. Add nutmeg before serving.
