Steps:
- 1. In a heavy saucepan, heat the olive oil over medium heat.
- 2. Add the onions and cook gently (2 minutes), or until softened.
- 3. Next add the carrots and chopped tomatoes, mixing well.
- 4. Now add the stock, season with salt and pepper, bring to a boil.
- 5. Cover and simmer over low heat for about 15 minutes.
- 6. Add the orzo and cook for another 15 minutes, stirring occasionally.
- 7. Stir in the chopped parsley, re-season if necessary and remove from heat.
- 8. Serve hot with a sprinkling of red pepper flakes and the lemon wedges on the side.
