VEGETABLE AND SAUSAGE SKILLET SUPPER image

Number Of Ingredients 14

8 ounces kielbasa or andoullie, cut into 1/2-inch slices
1 Tbsp olive oil
2 medium onions, chopped
2 medium zucchini, cut into 1/2-inch dice
1 large red bell pepper, diced
2 jalapeno peppers, minced
2 cloves garlic, minced
1/2 tsp ground cumin
1/2 tsp dried oregano
1/2 tsp salt
3 cups cooked brown rice
1 (15 oz) can black beans, rinsed
1/2 cup water
hot sauce, to taste

Steps:

  • 1. Cook sausage in a large skillet over high heat, turning occasionally, until lightly browned, about 2 minutes. Transfer to a plate. 2. Add oil to the skillet. Add onions, zucchini, bell pepper, jalapenos, garlic, cumin, oregano and salt; cook, stirring until onions are tneder, about 4-5 minutes. Stir in rice, beans and water; cook, stirring, until heated through, about 4 minutes. Add the reserved sausage and season with hot sauce. Serve hot.
