Vegan Cinnamon Pear Bread Amish image

I made this for my family and my 17 year old daughter and my 53 year brother in law wrote down the recipe to keep. My brother law ate most of the first pan. My daughter has never asked for a recipe before. I had to tweak this recipe a lot to make it vegan.

1 c vegan butter, softened i used earthbalance
2 c sugar
1 medium banana (ripe) about 1 cup
2 c almond milk - plus 2 tsps cider vinegar
4 c all purpose flour
2 tsp baking soda
2 medium pears (ripe) diced or 2 diced apples
CINNAMON SUGAR TOPPING
1 c sugar
2 tsp cinnamon

Steps:

  • 1. Preheat oven to 350 degrees Grease 2 bread loaf pans
  • 2. Cream together butter, 2 cups of sugar, 1 medium ripe banana. Add almond milk with vinegar, flour, and baking soda. Fold in 2 diced pears or you could use apples too.
  • 3. Pour batter into two greased loaf pans. I used pampered chef stoneware bread pans.
  • 4. mix together in separate bowl 1 cup sugar and 2 teaspoons real cinnamon and sprinkle over the batter of both pans. swirl some into batter with knife
  • 5. Bake @ 350 degrees for 45-55 minutes or test with a toothpick - comes out clean. Cool in pan for 25 minutes.
