VANILLA ALMOND SANDCASTLE CAKE image

FOR THE CAKE:
2 2/3 cups cake flour
1 1/2 teaspoon baking powder
1/2 teaspoon salt
2 sticks (1 cup) butter
1 1/2 cups sugar
4 eggs, lightly beaten
1 teaspoon vanilla extract
1/3 teaspoon almond extract
2/3 cup milk
FOR THE GLAZE:
1/2 cup powdered sugar
1/4 cup water
1 tbls. lemon juice
2 tsp. vanilla extract
1/4 teaspoon almond extract

Steps:

  • Preheat oven to 325 degrees. Grease the pan with Pam for Baking. Stir together the flour, baking powder and salt. Set aside. In a stand mixer using the flat beater, cream the butter for 30 seconds. Add the sugar and beat until fluffy, about 5 minutes. Add the eggs one at a time, beating well after each addition. Beat in vanilla and almond extract for 1 minute. Reduce speed to low and add flour mixture, alternating with milk and beginning and ending with flour. Beat just enough to incorporate. Spoon batter into pan, spreading the batter so the sides are higherthan the center. Bake until the cake begins to pull away from the sides of the pan and a toothpick in the center comes out clean, about 45-60 minutes. Transfer to a wire rack to cool for 15 minutes. While baking, mix together glaze. Tap the pan gently on a work surface to loosen. Invert onto wax paper and brush with the glaze. Let cake cool at least 2 hours before serving.
