Va-va-voom Veggie Casserole image

Va va voom is right. I'm not a big fan of mixed veggies but this recipe changed my mind at the first bite. Every time I make it, I have copies of the recipe ready so that I can hand them out to the many who ask for it.

Number Of Ingredients 8

2 can(s) veg-all, drained
1 can(s) water chestnuts, drained
1/2 c onions, chopped fine
3/4 c mayonnaise
1 c cheddar cheese, grated
TOPPING
1 1/8 pkg (sleeve) ritz crackers, crushed
1 1/4 c butter, melted

Steps:

  • 1. Mix first five ingredients together and pour into a greased casserole dish.
  • 2. Sprinkle crushed Ritz crackers over the top, then pour melted butter over the crackers.
  • 3. Bake at 350 degrees for 25 minutes or until bubbly around the edges.
  • 4. Note: our family motto is, "if a little cheese is good, a lotta cheese is better," so feel free to add extra cheddar (we like sharp), but seriously, don't overdo it.
