Uncle Ben's Stuffed Sausage Bellpeppers image

This is another creation I came up with using my Osso Bucco Sauce that I keep raving about only this time it made a delicious bed of sauce for these stuffed bellpeppers and so appropriate together. I hope you enjoy my newest creation. Enjoy!

Number Of Ingredients 11

6 medium bellpeppers
1 tablespoon(s) butter for sauteing onions
- the tops of the 6 bellpeppers chopped and saute'd with onion
1/2 small onion chopped and saute'd
2-3 clove(s) garlic chopped saute'd with onion
1/2 - a roll of jimmy dean's regular sausage 1/2 cooked
1 box(es) uncle ben's wild rice cooked
1-2 sprig(s) rosemary
1/4 teaspoon(s) sage
6 slice(s) deli swiss cheese
3-4 cup(s) osso bucco red sauce (see my recipe)

Steps:

  • Prepare the ingredients as indicated. Then in the frying pan mix together the saute'd veggies and sausage then add the spices. Stir over a warm burner.
  • Add the rice and mix together. Then stuff each bellpepper full of the stuffing.
  • Cover each bellpepper with a slice of the swiss cheese and cover each one with a sheet of tin foil and close it up tightly.
  • Put face down in the pan and add about a 1/4 of an inch of water in the bottom of the tin pan.
  • Bake in the over at 350 degrees for 1 hour.
  • Remove from oven and make sure the bellpepper is cooked all the way through. Heat the Osso Bucco Sauce in the microwave until hot.
  • Open the bellpepper and slice it in half long ways and put in a pan with the heated Osso Bucco Sauce covering the bottom of the pan. Now add slices of swiss cheese to each open faced stuffed bellpepper.
  • Put in the oven and broil for about 2-3 minutes or until the cheese is melted.
  • Serve with a slice of French bread and enjoy!
