Steps:
- Preheat oven to 350 degrees F.
- Cook pasta according to package directions. Set aside.
- Heat bacon grease in a large skillet. Saute onion in bacon grease over medium heat until tender and transparent, about 3 minutes. Add the flour and stir, cooking for about a minute. Mix in the BBQ sauce then slowly add the milk. Stir continuously until well combined and slightly thickened. Stir in the cheddar cheese and 1 cup of Gouda cheese. When the cheese is melted, remove the sauce from heat.
- Add sauce and bacon to cooked noodles. Stir until everything is well-combined then pour mixture into a large casserole dish. Top with remaining Gouda cheese and fried onions.
