To make this ukha Russian fish soup recipe, start by making a fish stock using a fish bone skeleton with head and tail attached. Strain the stock and discard the fish bones. Cook potatoes and bay leaves in the stock. As they cook, chop the fish into 2-inch cubed pieces. If the fish chunks are too small, they will fall apart. Add a load of chopped dill and season to taste. Garnish with chopped green onions and/or parsley.
