Ugly Dip image

This dip has a little kick to it. Usually if I double it, I make it with one can of original Ro-Tel and one can of Extra Hot Ro-Tel. No matter where I take this dip, I always get requests for the recipe. Enjoy!

1 can(s) (del monte) fiesta corn
1 can(s) (ro-tel) diced tomatoes and green chilies
8 oz sour cream
1 c mayonnaise (do not substitute miracle whip)
1/2 tsp sugar
1 bunch green onions, chopped
2 c shredded sharp cheddar cheese

Steps:

  • 1. Drain corn and tomatoes with green chilies in colander.
  • 2. Mix sour cream, mayonnaise and sugar together until smooth.
  • 3. Add drained corn and tomatoes with green chilies to sour cream/mayonnaise mixture.
  • 4. Stir in onions and cheddar cheese. I save a tablespoon or so of the green onions to sprinkle on top when finished.
  • 5. Serve with corn tortilla chips.
